Vareniki (вареники) are boiled dumplings. In my family, the fillings were usually on the sweet side (cherries or tvorog/farmer’s cheese).
Lenivye vareniki (ленивые вареники), or “lazy dumplings,” are—as the name suggests—a quicker version: instead of making the wrapper and filling separately, the ingredients are mixed together to form dough, then shaped into small pieces, similar to gnocchi.
They’re typically served with butter, sour cream, and/or jam.
Ingredients for 1-2 portions
- 350 g tvorog or farmer’s cheese
- ½ teaspoon salt
- 1 tablespoon sugar
- 1 egg
- 1 cup flour (approx.)
Directions
- In a bowl, mix the cheese, salt, sugar, and egg until smooth.
- Add about ¾ of the flour and stir until the dough comes together.
- Lightly flour your work surface. Roll the dough into logs about 2 cm in diameter.
- Cut into 1 cm pieces.
- Bring a pot of lightly salted water to a boil. Add the dumplings.
- Reduce the heat to medium-high and cook until the vareniki rise to the surface.
- Drain and serve warm with butter, sour cream, or jam.
