My Chili Con Carne

This is the way I make Chili con Carne for my family.

The cacao powder really brings a nice touch. You can also add some lime juice at the end to brighten it up.


Ingredients :

  • 500g beef mince
  • 2 bell peppers
  • 2 onions
  • 1 can of kidney beans (drained)
  • 1 can of baked beans
  • 1 small can of corn (drained)
  • 1 can of diced tomatoes
  • 1 tsp of ground coriander
  • 1 tsp of ground cumin
  • 1/3 tsp of cinnamon (optional)
  • 2 chipotles in adobo sauce
  • 2 garlic cloves
  • 1 tsp of oregano
  • salt
  • black pepper
  • 1 tsp of cacao powder (unsweetened)
  • 1-2 tbsp of paprika
  • other spices you like ( like chili de arbol, guajillo, ancho)

Directions:

  1. Dice the onions and the bell peppers.
  2. Preheat a pan on high heat with some oil. Add the mince with a pinch of salt and some black pepper.
  3. When the meat get some colour, reduce the heat to medium-high and add the onions and bell peppers and cook until the onions begin to be translucent.
  4. Add the garlic (crushed or diced) and the kidney beans and baked beans.
  5. Add the tomatoes.
  6. Add the coriander, cumin, cinnamon, diced chipotle and its sauce, oregano, paprika and whatever other spices you like and let it simmer for 15-20 minutes.
  7. Finally add the corn and the cacao powder. Taste for seasoning.
