Breakfast sandwich

This is the favorite Breakfast sandwich of my wife, but I only make it on the week-ends as I do not have time for breakfast during the week.

The best way to achieve a beautiful crispiness of this sandwich is, for me, to use a panini machine, as it applies some weight while toasting both sides at the same time. But you can also do it in a pan, and press the sandwich slightly down. Also spreading some butter on the outside of the sandwich will crisp the sandwich nicely and is definitely worth it.

You can serve it with some ketchup or chili sauce on the side.

Ingredients for a sandwich

  • 2 slices of bread
  • 1 egg
  • 1 tomato
  • 3 slices of bacon
  • 3 slices of cheese (I like to put one slice of Cheddar, one of Provolone and one of Gouda)
  • Some butter
  • Salt and pepper


  1. Cut the tomato into 5mm thick slices.
  2. Cook the bacon the way you prefer, but keep the rendered fat.
  3. Put the rendered bacon fat in a pan on medium high heat and cook the tomato slices until golden brown.
  4. Fry the egg with some salt and pepper.
  5. Build the sandwich (from bottom to top):
  6. Bottom bread
  7. Slice of cheese
  8. Bacon
  9. Fried tomatoes
  10. Slice of cheese
  11. Egg
  12. Slice of cheese
  13. Top bread
  14. Butter the outside of the sandwich and toast it in a panini machine, or pan toast it on both side while pressing the sandwich down until the bread is crispy and golden brown.
