A simple marinade that my family has always loved. It works equally well for chicken or beef. For the best result, use a cut with a bit of fat; I personally prefer pork neck.
If you aren’t comfortable cooking over an open fire, you can bake the skewers in the oven and finish them under the broiler (or briefly on the grill) to get that perfect crisp.
Ingredients:
- 400g of pork (pork neck recommended)
- 1 onion
- 2 garlic cloves
- 2 to 3 tbsp of vinegar
- 1 tsp of salt
- 1 tsp of black pepper
Directions:
- Cut the pork into cubes (at least 2cm).
- Cut the onion into quarters and separate the layers.
- Thinly slice or crush the garlic.
- Mix all the ingredients and leave it to marinate for at least 4 hours (I prefer doing half a day to a whole day)
- Make the skewers by alternating a piece of pork and some onion. Make sure not to pack them too tightly; leaving a tiny bit of space between the pieces ensures the heat can circulate and cook everything evenly.
- Cook over medium-high heat until cooked through. A little bit of char adds lovely flavor and texture.
