Rework of an archived recipe.
There is a franchise of restaurant in the French speaking part of Switzerland called “Les Brasseurs” (or “Brewers” in English) that is specialised in, as the name says, brewing beer as well as serving dishes that goes well with beer. One of those dishes is called “Poutine des Brasseurs” (or Brewers’ Poutine). It is pretty far from a traditional Canadian Poutine, but it is lovely with beer.
This recipe is my take on that restaurant dish and you can customise it as much as you want: different sausages (or even some pepperoni instead of sausages), other spices or sauce or also different cheeses. So if you have a version of yours, please share it with me.
Ingredients for 2 people
- 400 gr of French fries
- 3 chipolatas sausages
- 3 merguez sausages
- 1 tablespoon of Gochujang (or any spicy sauce)
- 3 tablespoons of barbecue sauce
- 200 gr cheddar
- 50 gr low moisture mozzarella
- Cook the fries as indicated on the packet or as you prefer. They need to be crispy.
- In a pan on medium high heat, cook the sausages until golden brown.
- Remove the sausages from the pan and slice then into 1cm pieces.
- Remove the rendered fat from the pan and add the Gochujang and barbecue sauce and cook for one minute at medium heat.
- Grate the cheese, but leave a few bigger chunks.
- Mix everything in a baking dish, and cook in the oven with the broiler or grill for 5 more minutes
